Rye Core Family Loaf

⏱ one cooking, boiling, or scalding piece

A juicy, compact rye bread with a scald – reduced to the essentials, aromatic, and family-friendly.

Ingredients

Adjust quantity:
  • 500 g rye flour Type 1150
  • 470 g water
  • 10 g salt
  • 10 g fresh yeast
  • 50 g rye flour Type 1150 (for the scald)
  • 200 g water (for the scald)

Preparation

  1. Prepare the scald: Mix 50 g of rye flour with 200 g of water in a small pot until smooth. Heat while stirring until a thick, pudding-like consistency forms. Cover immediately and let cool completely.
  2. Dissolve the yeast in 270 g of water. In a large bowl, combine 500 g of rye flour, salt, yeast water, and the cooled scald.
  3. Mix the dough for 5–6 minutes with a sturdy spoon or on low speed until no dry spots are visible. Rye dough will be more pasty than elastic.
  4. Cover the bowl and let the dough rest at room temperature for 45–60 minutes until it has slightly risen.
  5. Lightly grease a loaf pan or line it with parchment paper. Transfer the dough into the pan, smooth the surface with wet hands, and optionally score lightly lengthwise.
  6. Let it rise again for 30–40 minutes until fine cracks appear on the surface.
  7. Preheat the oven to 230 °C (450 °F) with top and bottom heat. Place the bread in the oven, briefly steam or place a small heatproof dish with water on the bottom of the oven.
  8. Bake for 10 minutes at 230 °C, then reduce to 200 °C (390 °F) and bake for another 35–40 minutes.
  9. Remove the bread from the pan and, if necessary, bake for an additional 5 minutes without the pan for a stable crust.
  10. Let cool completely, preferably allowing it to rest for several hours so that the juicy, compact crumb can set properly.

Decoded according to the Swiss Bread Aroma Matrix. Click on an aroma for the sensory video and biochemical background.

Roasted Onion / Roast

The savory umami crust. The signature of nearly black baked wood-fired bread.

Roasted Onion / Roast

Pure Malt / Beer

Starch breakdown and roasting process. Very bitter and dark, typical for Pumpernickel.

Pure Malt / Beer

Coffee / Mocha

Strecker degradation at >240°C: Dominance of alkylpyrazines and furanones for bitter coffee and roast notes.

Bread Spices

The essential oils in cumin, coriander, and fennel mask many other aromas.

🔬 Swiss Master Baker Knowledge

The Baking Science Behind this Recipe

The physical foundations of this recipe. Click on a process for the master baker video and scientific background.

1.05 Wheat vs. Rye vs. Spelt

Wheat (strong 3D network), rye (blocked by mucilages), spelt (extremely extensible but tear-sensitive gluten).

1.08 The Fat Paradox

Fat initially blocks gluten formation (shortcrust pastry). Added later, it coats the dough layers smoothly and keeps the pastry moist for a long time.

3.03 The Windowpane Test

The only way to check if the dough is properly kneaded: can it be stretched thin and translucent without tearing?

7.02 Steam (Condensation)

Water vapor condenses on the cooler dough surface. This keeps the crust extremely elastic for magical oven spring and creates a mirror-like shine.

7.03 Oven Spring

Rapid thermal expansion of air and alcohol in the cells up to 50°C (the dough volume skyrockets).

7.06 Maillard Reaction

Amino acids and sugars react from 130°C to form highly complex brown melanoid pigments. (The factory for pure roasting aromas).
