Evening Gold Crunch Rolls

⏱ a quick recipe (under 3 hours)

Quick, crackling crispy rolls for a relaxed dinner for two – minimal effort, maximum crunch.

Ingredients

Adjust quantity:
  • 300 g wheat flour Type 550
  • 200 g lukewarm water
  • 10 g fresh yeast
  • 6 g salt
  • 5 g sugar

Instructions

  1. Dissolve the fresh yeast with the sugar in the lukewarm water. Let it sit for 5 minutes until the mixture appears slightly active.
  2. Mix the flour and salt in a bowl. Add the yeast water and knead for 8 to 10 minutes until a smooth, elastic dough forms.
  3. Cover the dough and let it rise at room temperature for 45 minutes, until it has noticeably expanded.
  4. Place the dough on a lightly floured surface, divide it into 4 equal pieces, and shape them into round or slightly elongated rolls.
  5. Place the shaped rolls on a baking paper, cover them, and let them rise for another 30 minutes.
  6. Preheat the oven to 230 °C (450 °F) with top and bottom heat. For a crustier result, place an oven-safe dish inside to heat up.
  7. Spray or lightly brush the rolls with some water and optionally make a single cut on top.
  8. Place the rolls in the oven and pour some hot water into the preheated dish to create steam. Bake for 15 to 18 minutes until golden brown and crackling crispy.
  9. Let them cool on a wire rack for 10 minutes and serve while still slightly warm.

🔬 Swiss Master Baker Knowledge

The Baking Science Behind this Recipe

The physical foundations of this recipe. Click on a process for the master baker video and scientific background.

1.08 The Fat Paradox

Fat initially blocks gluten formation (shortcrust pastry). Added later, it coats the dough layers smoothly and keeps the pastry moist for a long time.

3.03 The Windowpane Test

The only way to check if the dough is properly kneaded: can it be stretched thin and translucent without tearing?

6.03 Scoring

Cut targeted break points with the blade to precisely release gases during oven spring through a majestic ear.

7.02 Steam (Condensation)

Water vapor condenses on the cooler dough surface. This keeps the crust extremely elastic for magical oven spring and creates a mirror-like shine.

7.03 Oven Spring

Rapid thermal expansion of air and alcohol in the cells up to 50°C (the dough volume skyrockets).

7.06 Maillard Reaction

Amino acids and sugars react from 130°C to form highly complex brown melanoid pigments. (The factory for pure roasting aromas).
