Lesson 6.00 • Phase 6
What is Final Proofing?
The last maturation stage for the shaped dough piece just before baking. Ultimately determines the volume.
Final proofing determines the final volume of the baked bread. In this sensitive phase, the dough piece must not be exposed to extreme drafts, as it would otherwise irreversibly dry out. The yeast produces a final burst of CO₂ in the small isolated network.
[VOLUMETRIC MAXIMIZATION] Final proofing is the last metabolic phase before thermal inactivation. The homogenized nucleation centers (air bubbles) are now maximally saturated with CO₂ through anaerobic yeast metabolism. Drafts (atmospheric evaporation) would dry out the epidermal skin of the dough (drying out), drastically lowering its viscosity and irreversibly blocking final expansion due to hard mechanical resistance.
