Lesson 3.01 • Phase 3
Dough Temperature
Why 25°C is perfect and 30°C means absolute disaster (enzymes completely destroy the dough network).
The target temperature for wheat doughs is exactly 24-25°C. This is achieved by calculating the exact mixing water temperature (kneading friction compensates for cold water). What happens at 30°C? An absolute catastrophe! Due to the heat, protease enzymes and bacteria go completely haywire. They start breaking down proteins at lightning speed. The dough loses its structural strength in minutes, becomes 'slimy', literally burns, and irreversibly collapses during fermentation.
[THERMAL METABOLISM ESCALATION] Enzymatic reactions follow the Q10 rule. A temperature increase of just 5-6°C beyond the optimum massively amplifies the molecular activity of endogenous proteases. Simultaneously, the microbial division rate explodes. The result is a hyper-fermented dough, in which the gluten network is biochemically broken down before macroscopic maturity is completed. The dough loses all viscosity and collapses.
