Spicy Bacon-Yogurt Rolls in 3 Hours

⏱ a quick recipe (under 3 hours)

Quick, savory family rolls with diced bacon and yogurt: golden on the outside, fluffy on the inside, and baked in under 3 hours.

Ingredients

Adjust quantity:
  • 500 g wheat flour Type 550
  • 7 g dry yeast
  • 120 g natural yogurt
  • 80 g low-fat quark
  • 220 ml lukewarm water
  • 120 g diced bacon
  • 10 g salt
  • 1 tsp sugar
  • 30 g soft butter

Instructions

  1. Render the diced bacon in a pan without additional fat until lightly browned. Then let cool on paper towels.
  2. In a bowl, mix the flour, dry yeast, sugar, and salt. Add the yogurt, quark, lukewarm water, and butter, and knead everything for 8 to 10 minutes into a smooth, elastic dough.
  3. Gently incorporate the cooled bacon into the dough until evenly distributed.
  4. Cover the dough and let it rise at warm room temperature for 60 to 75 minutes, until visibly increased in size.
  5. Transfer the dough to a lightly floured work surface and divide it into 8 equal pieces. Shape each piece into a round or slightly elongated roll.
  6. Place the rolls on a baking sheet lined with parchment paper, flatten them slightly, and cover to let rise for another 30 to 40 minutes.
  7. Preheat the oven to 220 °C (428 °F) with top and bottom heat in advance.
  8. If desired, make a single cut in the center of each roll and bake for 15 to 18 minutes until golden brown and the crust is appetizingly browned.
  9. Let cool briefly on a rack and serve best while still slightly warm.

🔬 Swiss Master Baker Knowledge

The Baking Science Behind this Recipe

The physical foundations of this recipe. Click on a process for the master baker video and scientific background.

1.08 The Fat Paradox

Fat initially blocks gluten formation (shortcrust pastry). Added later, it coats the dough layers smoothly and keeps the pastry moist for a long time.

1.09 Milk & Lactose

Yeast cannot break down lactose. It remains as pure capital in the dough and causes deep dark turbo-browning in the oven.

3.03 The Windowpane Test

The only way to check if the dough is properly kneaded: can it be stretched thin and translucent without tearing?

6.03 Scoring

Cut targeted break points with the blade to precisely release gases during oven spring through a majestic ear.

7.02 Steam (Condensation)

Water vapor condenses on the cooler dough surface. This keeps the crust extremely elastic for magical oven spring and creates a mirror-like shine.

7.03 Oven Spring

Rapid thermal expansion of air and alcohol in the cells up to 50°C (the dough volume skyrockets).
