Crispy Sesame White Bread for 10 People

⏱ a quick recipe (under 3 hours)

Quick party white bread with a golden crust, airy crumb, and fine sesame – freshly baked in under 3 hours.

Ingredients

Adjust quantity:
  • 1 kg wheat flour Type 550
  • 700 ml lukewarm water
  • 30 g fresh yeast
  • 20 g salt
  • 80 g sesame seeds
  • 20 g honey

Instructions

  1. Dissolve the fresh yeast with the honey in 100 ml of lukewarm water and let it sit for 5 minutes until it becomes slightly active.
  2. In a large bowl, combine the wheat flour, salt, the yeast mixture, and the remaining water, and knead for 8–10 minutes until a smooth, slightly soft dough forms.
  3. Knead in 50 g of sesame seeds until evenly distributed throughout the dough.
  4. Cover the dough and let it rise at a warm room temperature for 45–60 minutes until it has noticeably increased in size.
  5. Transfer the dough to a lightly floured surface, divide it into 2 large loaves or 3 medium loaves, and shape them tightly.
  6. Lightly moisten the shaped loaves with water, roll them in the remaining sesame seeds or sprinkle them on top, and place them on a baking sheet lined with parchment paper.
  7. Let them rise again for 20–30 minutes. During this time, preheat the oven to 240 °C (464 °F) with top and bottom heat and place a heatproof dish for steam on the bottom of the oven.
  8. Score the loaves, place them in the oven, and immediately pour some hot water into the dish to create steam. This will make the crust especially crispy.
  9. Bake for 10 minutes at 240 °C (464 °F), then reduce the temperature to 210 °C (410 °F) and bake for another 20–25 minutes until golden brown.
  10. Allow the loaves to cool completely on a wire rack to keep the crust crispy.

🔬 Swiss Master Baker Knowledge

The Baking Science Behind this Recipe

The physical foundations of this recipe. Click on a process for the master baker video and scientific background.

1.02 Proteins (Gliadin & Glutenin)

Water unites gliadin (stretch) and glutenin (rubber-like elasticity) into the magical and vital gluten network.

3.03 The Windowpane Test

The only way to check if the dough is properly kneaded: can it be stretched thin and translucent without tearing?

6.03 Scoring

Cut targeted break points with the blade to precisely release gases during oven spring through a majestic ear.

7.02 Steam (Condensation)

Water vapor condenses on the cooler dough surface. This keeps the crust extremely elastic for magical oven spring and creates a mirror-like shine.

7.03 Oven Spring

Rapid thermal expansion of air and alcohol in the cells up to 50°C (the dough volume skyrockets).

7.06 Maillard Reaction

Amino acids and sugars react from 130°C to form highly complex brown melanoid pigments. (The factory for pure roasting aromas).
