Lesson 9.20 • Phase 9
Bread Spices
The essential oils in cumin, coriander, and fennel mask many other aromas.
Origin & Trigger: Classic German bread spices (fennel, cumin, coriander). Essential oils completely dominate the aroma once added.
Molecular Behavior: [BOTANICAL VOLATILIZATION] Bread spices are biocapsular reservoirs for secondary plant compounds. Baking heat bursts the seed capsules and evaporates isolated, lipophilic terpenes (D-Carvone in cumin, Linalool in coriander). These essential compounds do not interfere with fermentation but flood human receptors so massively that they almost completely mask subtle dough aromas.
