Lesson 9.17 • Phase 9
Beetroot / Earthy
Pure terroir. Typical for ancient, unmanipulated grains like woodland rye.
Origin & Trigger: Typical terroir aroma, often caused by extremely old grain varieties (woodland rye, wild einkorn).
Chemical Molecule: Geosmin
Molecular Behavior: [TERROIR ACCUMULATION] Geosmin is a bicyclic alcohol primarily biosynthesized by soil bacteria (Streptomyces). Ancient grains absorb the heat-stable molecule through their roots from the soil and store it as an unadulterated soil signature in their husks.
